A Pączki (pronounced “Pownch-key” or “Pan Chky” depending on how Polish you are) is a traditional Polish pastry that is released every Fat Tuesday by bakeries all over Chicagoland. They are made by frying dough, filling with a variety of fruit or custard fillings, and coated with sugar
And every year, to honor our Polish heritage, we brew the Pączki Stout, a Double Milk Stout with lactose and cocoa nibs, to create our own liquid version of this gluttonous moment. This year our “alternate flavour” is UBE! Ube is popularly used in desserts in Filipino cuisine, often boiled and then mixed with sweetened condensed milk. Here, we channel the pastries that have sprung up using ube filling for an extra-special paczki!
We will have a limited amount Pączki Stouts available for purchase at the Mothership. You can also pre- order for pick up below.
We will have plenty of Pączki you can purchase by guest pastry chefs at the the taproom
We will be selling a box of four different traditional Pączkis including one of each flavor: Raspberry, Blueberry, Custard w/ Chocolate and Rosehip. You can place a pre-orders of these Four Pączki Pastries baked by Racine Bakery for PICK UP ONLY on February 15th at the Marz Mothership taproom on 3630 S Iron St.
This year we are featuring traditional Polish dance program by the Wici Song and Dance Theater at 4pm. And it wouldn’t be a party without The Environmental Encroachment Marching band who rocks out around 6pm. Taco Sublime will be making special Pączki sandos and guest chefs will be slanging other treats as well.
